Curvé from Muscat Lunel (Yellow Muscat or Muscat Blanc) and Traminer. Sounds mega aromatic, and it is! But due to the fermentation on the skins, a great dry and slightly bitter taste and not that cheap fruity as is so often found with the two grape varieties!
The Muscat Lunel was destemmed and pressed and fermented spontaneously in the tank. Uncleared, natural cold deduction, 3 months on the full yeast, 2 more months on the fine yeast, once a week stirring of the yeast until the end of the must fermentation and once every other week after the must fermentation.
Traminer partially fermented in the tank, partially squeezed and destemmed. 18 days on the skin, then pressed and transferred to clay vessels on the heavy yeast. The wine matured for 6 months in the clay pots, where it was turned every day. The two parts were mixed before the unfiltered filling.
