Pinot Meunier takes up the main component of the cuvée with 60%. There are also 30% Pinot Noir and 10% Chardonnay. The base wine consists of the 2019 and 2020 vintages. The preparation takes 6 months before the wine is bottled for the second fermentation. There then follows another 19 months of bottle storage before disgorgement. The Éclats de Meulière is adjusted to 3.5g/l using dosage.
Cyril Jeaunaux is the third generation to grow wine and switched to biodynamic farming in 2015. In the very south of the Côte des Blancs, on the small river Petit Morin, lies the village of Tallus Les Prix. Here Champagne is really still rural. Nothing suggests luxury and jet set. The vineyards in the valley are at risk of late frost due to cool air from the surrounding hills. The Pinot Meunier, which dominates here, is best prepared against this. A small part of the grapes come from the Côte des Bar, where Cyril still cultivates one hectare of vineyards. The wines are aged in used barriques. Biological acid degradation is avoided if possible. This is where very individual and honest champagnes are created that combine stimulating acidity, minerality and drinking flow.
